Wine
Tim Adam Riesling is made with parcels of fruit from carefully selected sites throughout the Clare Valley, typically including the Ireland's, Skilly Ridge and Bayes Vineyards.
The fruit is crushed. Only the juice that runs free from the press without applying any pressure is used to make the wine, clarified and fermented over two weeks at 12-14°C. The wine is protein and cold stabilized prior to bottling.
Light straw, Tim Adams Riesling has lifted floral aromas with citrus flavours and a brisk acid finish. Cellaring potential is seven years.
